Earl grey tea cake

"To achieve your dream, you must be motivated."

that's my boost to kick start the day otherwise I might snooze and miss school again. needa complete work that's piling up my head, at least it made me feel like this. returned to yoga again after 2 months break coz honestly, I thought I could do it alone but still love getting out of my place,  joining other ladies and having someone to correct my mistakes.

Okashi: Sweet Treats Made With Love

initially I planned for a 500 series's cake recipe but it turned out repetitive and in my opinion mediocre. this I bought offers an array of sweet treats made from easily available ingredients or at least my favorite baking store offers.

imma try more recipe from inside and share with you :)

Ingredients

  • Pastry flour or top flour 150g, sieved

  • Baking powder 1/2 teaspoon

  • Sugar syrup 100g (made using 50g sugar and 100g water)

  • Lemon Juice 2 tablespoon

  • Unsalted butter 150g, softened

  • Icing (confectioner's) sugar 150g

  • Glucose/ golden syrup 15g

  • Eggs 150g, about 3 eggs

  • Salt 1/8 teaspoon

  • Early grey tea dust from teabag 5g

  • Ground almonds 15g

  • Lemon 1, grated for zest

  • Fresh whole milk 1 tablespoon

I'm not sure Russian Earl Grey is the same as normal Earl Grey but that was the one I could find and it's triangle! due to my poor focus ability I didn't realized I'm supposed to add 5g of Earl Grey, instead I only added 1 teabag of it.


Directions


2 tablespoon lemon juice x sugar syrup

set aside



grate lemon for zest

it's the same one I juiced for juice. took me awhile to to finish grating 1 lemon and I could feel cuts I didn't know I have thanks to the acidity.


butter x icing sugar x golden syrup

beat until light and fluffy
couldn't find glucose syrup plus I don't have any recipe that needs it and golden syrup was a good substitution.




Gradually add eggs and beat well then add...

ground almond x earl grey tea dust x lemon zest x salt x milk

mix well

add flour and fold completely using a spatula



done when you get smooth and glossy batter






pour in 19cm loaf pan w/ parchment paper

using spatula to "cut" in the middle will give you that beautiful split on your cake you see in bakery


love newspaper,

pack and throw.


Baked



brush sugar syrup x lemon juice prepared and set aside earlier on cake when it's still warm.

used an expired baking powder coz I thought it won't be expired since there's so much left but it's been 2 months since the date -___-"
